Well, I was a bad menu planner last week…I made my menu knowing that I had to pick up a few ingredients to finish it off, BUT I never got out to the grocery store to get them! So we ended up with alternative dinners…but it was neat to see what we could make with what we had. I had some frozen popcorn shrimp in the freezer (can we say, $.32 at walmart!?) so had popcorn shrimp salads…reminded me of my fav salad at Applebee’s!
And then one day we had tostadas, which was also very yummy
I still have toastada shells leftover and some ground meat so we’ll be having them again this week.
We did have the parmesan round steak and tuna quesadillas, which were both quite good.
Here’s my menu!
Monday: Oven Fried Chicken Legs served with mashed potatoes and a veggie.
Tuesday: Tortellini Soup (I’m going to wing this…plan on using chicken broth, frozen tortellini, fresh spinach, mushrooms, parmesan)
Wednesday:Cheesy Chicken Simmer
Thursday: One Pot Ham Dinner (Thanks Amy @ amysfinerthings.com!) I am using my free Target ham!
Friday: Tostadas (we actually crush it all up and make it taco salads for the boys, it’s easier for them to eat. And I will also serve it with Salsa Ranch…just salsa mixed with Ranch!)
Saturday: Crispy Beef Shanks (This is one I didn’t get to make last week. I will be putting the meat in the slow cooker instead of boiling it). Served with rice and a veggie.
